I dropped Ben off at his meeting and headed back to the hotel room to work on some blog stuff. I also had a very exciting call about a new project I’ll be doing with one of my favorite companies (hint: I’m not the head of the Chickpea Lover’s Club for nothing).

Around twelve noon I was about to get kicked out of the hotel so I grabbed my stuff and went to get lunch.

Last time we checked out Healdsburg I ate lunch at big John’s supermarket. They have a respectable salad / hot food bar, but it’s expensive (50 cents a lot more than WF!). So, I grabbed a bag of coleslaw so I wouldn’t waste any weight with veggies and made a tray of goodies.

Then, I topped it with the coleslaw and shook it up!

And I’m incredibly busted because I identified this cookie and had to have it. First, it’s a local company and second the ingredients were excellent and I want to try and make this at home!

It’s really BIG! JustlikeIlikeit.

It’s really thick and the outside was crunchy / crusty, but the inside was chewy. It didn’t taste healthy either. मन पर्यो।

Then, I had to serve a penance for my cookie sin and I took a 2 mile walk around downtown Healdsburg.

I walked from the store to the downtown Bakery & Creamery to get Ben a treat. The last time we checked out he had an fantastic almond tart.

There’s no chocolate in this treat, so I’ll pass…

And considering that I was in the area and all, I figured it was only ideal to get an iced coffee from The flying Goat.

Now I’m blogging en route to the airport. It looks like we’re going to miss our flight (!#!@!!). Stress. Hopefully, we’ll be able to catch the last flight back home tonight because I have a busy day tomorrow.

It’s Marathon Monday!!!

Wesley Korir won the Boston Marathon for the men (2:12:40) and Sharon Cherop won the women’s race in 2:31:50.

It’s crazy how hot it was for the Boston Marathon runners today – over 80 degrees! In extreme weather conditions you must make sure and adjust your goals. The winning times this year were substantially slower than in previous years. See? even the pros slow it down on days like this!

The winners each get $150,000 so I’ve made a decision to apply for a job as the winner of the Boston Marathon for next year. Can I put you down as a reference? धन्यवाद

But then I find something else that I like and forget whatever was keeping my attention for a new love.

My mom calls them “phases” which I find offensive because for the moment I think this is going to be my favorite thing/person/food/show FOREVER!!

“It’s not a phase Mom, I’m going to love NSYNC until I die!!!!!!!!!!!!!”

This has obviously been going on for a while  

Anyway.

Here’s what I’m obsessed with this week:

1. dance Moms. It’s a new-to-me show on Lifetime.

I randomly discovered it when I heard the dancer in the Sia video I’m also obsessed with is on the show:

So, I looked it up and fell in love. and now I have like 12 episodes on my magic TV machine. I watch it every night. like a creeper. समाप्त।

(Note: That’s Chloe, not the girl from the video. I like them both because again, I’m obsessed.)

2. Yogurt. I’ve always liked the stuff, but I’ve been eating it every day – sometimes twice a day.

3. finding the perfect perfume. I want a ‘go-to’ scent (besides ‘Sweaty Runner’). I spent the longest time in Ulta the other day trying sprays, but didn’t find the one I was looking for. Every now and then I’ll get a whiff of a stranger and think, “That’s it!” but if I ask them what they’re wearing they say it’s their conditioner or something. Bah.

4. Necklaces. I’m not a jewelry girl, but I’ve wanted a 26.2 charm necklace for a while. Then, I saw a charm in the shape of CA and fell in love. I’m working on acquiring both

I went on a walk with skinny Runner this afternoon.

We brought water so we wouldn’t be in danger of dehydration…

This weekend my mommy and I were contemplating what to produce Easter. She really desired ham, but we were at a loss about what to make with it.

Normally we pair everything with beans (Mexican requirement) and potato salad (love me some tater salad!).

When my mommy suggested scalloped potatoes I was surprised, but game.

We have never made scalloped potatoes before. Heck, I don’t think I’ve ever had them before!

So, I put myself in charge of creating a healthy recipe for scalloped potatoes. After some research I gathered my ideas and did my own thing.

This version utilizes greek yogurt instead of sour cream.

Healthy Scalloped Potatoes Recipe

3 pounds potatoes – peeled and sliced ( 8 medium)

1 cup ordinary greek yogurt

1 1/2 cans of 98% Fat complimentary cream of Mushroom soup

1/2 cup low fat milk (add a lot more as needed)

1/2 tsp pepper

1/2 tsp garlic powder

2 cups shredded sharp cheddar cheese

Preheat oven to 350 degrees.

Mix all components except potatoes and cheese in a bowl

Spray casserole with non-stick and put down one layer of sliced potatoes.

Spread 1/3 of the yogurt mixture on the potatoes.

Add 1/3 of the cheese.

Repeat layers – mine made about 3.

Top with cheese.

Bake at 350 for 45 – 60 minutes.

About 10 minutes before it’s done add crispy onion straws.

I’ve always been a big fan of Ricola cough drops since I feel like they really work (versus just feeling like I’m eating a candy when I have a cough)! They have a terrific variety of flavors and even a new product with B vitamins. Depending on my mood/needs I have used their OG cough drops, sugar free version and now I think I have a new favorite in their Revitalizing Drops.

First let’s talk about staying healthy during this germ-y time of year…

Tips to stay healthy during cold and Flu Season

1. eat right. Making sure your body is fueled up with healthy foods to keep the machine going! cutting out entire food groups or eating an un-balanced diet can make your body work harder to think, move and stay healthy.

2. Vitamin C. This ties in with the above tip, but I think it’s important to stress – I try to eat a good amount of Vitamin C via foods on a daily basis. If I feel like I’m not getting enough I’ll take a supplement.

3. get enough sleep. When I feel like I’m getting sick I load up on Vitamin C (either via a smoothie packed with tons of fruits & veggies or sip a Vitamin C drink) then I make sure to get a good night’s sleep. most of the time this helps my immune system fight it off.

4.Flu shot. I got a flu shot a few weeks ago. since I travel a lot I feel like this helps me avoid some of those flu germ-ies flying around.

5. Be diligent about washing your hands. this time of year we’re out shopping more and attending holiday parties – there just seems to be an increase of opportunities to be exposed to cold and flu germs. Make sure you wash wash wash to get ‘em off ya.

6. Ricola Revitalize with B Vitamins!  The new Ricola Revitalizing Herb drops have 20% of the suggest adult daily value of Vitamin B6 and B12! I am a big fan of taking a B vitamin over an energy drink (they are typically just Bs and caffeine for tons of $$$) and this is a terrific option.

I cooked this up with a Quorn veggie burger. I threw in a handful of chopped nuts and tons of Sriracha. Amazing!! Protein Smoothie without protein Powder Since I woke up at 4:30am yesterday and ran a lot I am more tired than usual today. and since I’m trying to maintain meatless Monday I need to make sure I am getting a good amount of protein to keep me full.
